What's great about travel is that there are always surprises, and sometimes an experience that was unexpected will turn out to be the highlight of your trip. In our case, we went to Sequoia National Park to see the trees but we came back talking about the caves.

Oh the giant Sequoia trees are impressive, all right. Who would not marvel at trees that weigh 2.7 million pounds, that are more than 2,000 years old and have branches seven feet in diameter?

More about those later, but along the way to see the trees we stopped in at the Foothills Visitor Center just after we entered Sequoia National Park. There was a line at the counter so we figured something was worth waiting for, so we nudged a little closer to see just what all the fuss was about. The visitors in line were signing up for the Crystal Cave, a guided tour that cost $10 for each adult, less for kids, and that was still another several miles' drive into the park. OK, we told the ticket-seller, we're game.

Next came a long, windy drive -- first up into the park, and then down several miles into a canyon to a parking area. From there, we still had a half-mile walk down a steep trail until it seemed we were almost down to the rushing river below. And then there it was: the entrance to Crystal Cave, mother of all Sequoia caves, or at least the one the public is most invited to explore.

Now this is not just any cave. The entrance is maybe just a little smaller than a railroad tunnel and no one is allowed in without a park escort. The guide will take groups of 70 persons or fewer into the cave and through the maze of many adjacent caves and chambers until, quite honestly, we probably never could have found our own way out. I guess this is why, when a little boy had to go to the bathroom, he was escorted back to the entrance by a second tour guide.

Aside from the spookiness that naturally comes from burrowing so far into the earth and its dark inner chambers, the real pay-off on this tour is the natural beauty. All along the way, from "room" to room, we saw gorgeous stalactites and "curtains," as well as ornate marble and all kinds of crystal formations that made this look like some sort of Hollywood movie set. Fortunately, there are paved, lighted pathways that we followed - our guide never far away - and the rooms had just enough illumination to showcase the formations and their brilliance.

On this hot summer day, the 48-degree temperature of the caves was refreshing. Our 45-minute tour was fascinating every step of the way, and climaxed when our tour guide turned off the lights to show us what total darkness was all about: nothing but black and not a thing visible, even an inch in front of your face. Our guide told us there have been times when the power generator has failed so, at this point, we were just about ready to return to the entrance. While many of the rooms are huge, this tour definitely is not for the claustrophobic.

After the tour it was a fairly steep hike back up to parking lot (something to keep in mind if you're bringing along Great Grandpa or anyone physically not able to climb the grade). But what an experience - well worth the price of admission and clearly the highlight of our visit to the park.

Sequoia is the second oldest park in the national park system - only Yellowstone predates it. Most people come to see the Sequoia trees, which appear in several groves scattered throughout the park. The trees grow to a height in excess of 300 feet, second in height only to the Redwood trees of Northern California, but considerably larger in girth.

With a little research you learn that the Sequoia tree gets so large because it grows throughout its life and it's virtually impervious to disease. They only topple because of natural disasters, which explains how it's possible to have a tree like the General Sherman tree - a park highlight and said to be the oldest living thing in the world. The General Sherman tree is 36 feet in diameter at its base and you could put a 15-story building under its first branch.

The Sequoias are only at certain elevations in the park - generally between 5,000 and 7,000 feet. There are 75 groves in the park with most of the pictures taken in the "Giant Forest" at about 6,500 feet. Four of the world's five oldest trees are found in this grove and park bean counters - or should we say tree counters - say there are 10,657 trees in this five-square-mile grove.

We noticed on our swing through the park that there are numerous walks and hikes through the trees - a really spectacular opportunity to get up close and personal with these giant treasures. In addition to the Sequoias, there are Ponderosa pine, sugar pine, red fir and foxtail pine, all growing to greater than normal size because of the area's climate. If you like the Great Outdoors, there is no better place to marvel at Nature's beauty.

There are also numerous places to stop and enjoy the views from the park. The roads through Sequoia take you high into the Sierra Nevada range and, on a clear day, the views of nearby mountains, or even down into the San Joaquin Valley, are spectacular. The view from Moro Rock is said to be one of the best.

If you want to make a weekend of it, there are several places in the park, and at the edge of the park where you can spend the evening. There are eight lodging facilities in Sequoia and Kings Canyon parks, as well as several more in the nearby areas of Three Rivers and Lemon Cove.

Several campgrounds in the park offer spaces for RV camping, although some are more primitive and allow only tents. If you're bringing an RV, travel on the park roadways can be a little harrowing at times because roads are steep and narrow in some spots. Leaving Sequoia Park, there is a long downgrade and you'll want to be sure to downshift rather than ride your brakes - the locals told us that vehicles of all sizes come down out of the park with brakes smoking due to overuse.

But whether it's trees or caves you're after, the long, windy road to Sequoia National Park is worth it. After all, some of these trees have been waiting for you since before the time of Christ.
AT A GLANCE

WHERE: Sequoia National Park is located in the central Sierra Nevada mountain range. You can reach the park from the south by taking Highway 198 east from Visalia. Highway 198 turns into the Generals Highway, the primary road through the park. The north entrance can be reached from Fresno by taking Highway 180 east.

WHAT: Sequoia National Park is famous for some of the largest trees in the world and some of the highest mountains in the U.S. The park also contains more than 100 marble solution caves, including the Crystal Cave, which is shown to visitors in tour groups of 70 people or fewer.

WHEN: Summer is the best time to avoid hazardous driving, as there can be snow in the park up until June. The Crystal Cave tours are offered from May 8 through November 14, weather permitting. No buses, trailers or vehicles over 22 feet long are permitted on the Crystal Cave road, and you'll need to allow 90 minutes from the time you purchase your tickets to get to the cave site.

Devoting time to establish consistency and structure is often one of the biggest challenges that parents face when trying to teach responsibility to their children. Life skills are best learned by example and repetition, meaning that consistency is of utmost importance in building the skills that your children will need in the future in order to survive successfully in today's society.

While imposing a daily home schedule may seem restrictive, the opposite is actually true. Children need to be able to depend on the adults in their lives and they feel safe and secure when they have a structure and routine to count on. Children do not yet have the maturity level to know how to structure their time on their own. They learn these skills from institutions like school and from the adults in their lives. For the parents, establishing a family schedule provides consistency and routine in a busy household. Consider our society in general, and you will find time schedules regulating most everything we do. Companies have standard hours, schools offer classes with a defined beginning and end, and mass transportation runs on a tight, proven schedule that is dependable to all who use it.

By establishing and posting a daily schedule in your home that includes chores and times that tasks are expected to be performed and completed, you are providing the structure and consistency that your children need in order to grow and mature. Schedules at home help regulate your children's lives so that they have a model to learn from that they can take into their adult lives.

Start with a morning routine that includes daily tasks required to get ready for a new day. Have a set time to be out of bed and a list of preparatory activities, including getting dressed, brushing teeth, and combing hair. Give a reasonable time frame to complete these activities, and require the children to be at the breakfast table by a certain time.

After breakfast, allow time for checking that all school supplies and homework are properly stored in backpacks and any accessories - gloves, jackets, etc - can be donned in time to either get in the car or meet the school bus. Once you have set a morning regime, it is time to work out the evening plans, outlining homework time, mealtime, showers, chores, and any other activities that are involved in daily life, while still maintaining a consistent bedtime. We are a sleep deprived culture. Make efforts not to pass this way of life on to the next generation.

Establishing a visible daily schedule for your children to follow provides consistency and a foundation from which they can build on. It will also help you with organizing your own day because you will now have a structure and schedule to manage your time effectively and efficiently as well. With a daily schedule in place for the adults, prevents you from having to reinvent the wheel every day. All family members know the routine and in that they learn and can trust. Providing these routines and structure for your children while they are young not only provides them with a model of how to manage a home and how to perform routine home tasks, but it also helps them develop critical time management life skills that are essential to later life success.

Recently we have had a few questions about meal times and the 14 hour rule from CMS for nursing facilities. The concerns are related primarily to the requirements for spacing of the evening meal and the next day's breakfast especially in the context of person centered dining. Facilities are trying to balance regulations with personal choice and this is fairly easy to achieve.

The State Operations Manual Appendix PP - Guidance to Surveyors for Long Term Care Facilities, tag F368 Frequency of meals states that each resident receives and the facility provides at least three meals daily, at regular times comparable to normal mealtimes in the community. The facility must offer snacks at bedtime daily. There must be no more than 14 hours between a substantial evening meal and breakfast the following day except: When a nourishing snack is provided at bedtime, up to 16 hours may elapse between a substantial evening meal and breakfast the next day if a resident group agrees to this meal span and a nourishing snack is served. Nourishing snack is defined as a verbal offering of items, single or in combination from the basic food groups. Adequacy of the nourishing snack will be determined both by resident interviews and by evaluation of the overall nutritional status of residents in the facility. It is also wise to check your state's nursing home regulations. Some states have more specific regulations on the expectations regarding what type and how much food is to be offered at HS.

Based on the CMS regulation, my personal recommendation would be to offer an HS snack from at least 2 food groups and preferably one that provides some protein. For example: half turkey sandwich with juice or milk, cereal with milk, a milkshake or milk with graham crackers, etc. It really comes down to what your residents want and whether or not they are satisfied with what you offer. So it's always best to ask the individual resident what they would like at HS snack - and providing a variety of HS snacks for residents to choose from is ideal. This helps to incorporate personal choice while meeting the intent of the regulation. If residents complain to a surveyor or if a surveyor finds that your facility has issues with unintended weight loss or other nutrition related problems then they may investigate further.

In addition, be sure that you have a written policy to explain what you will do if your meal times do not meet the 14 hour rule - and what you are providing as the "nourishing HS snack" to show you are complying with the regulation. We use the explanation that a "substantial evening meal" is defined as offering of three or more menu items at one time, one of which includes a high quality protein... The meal should represent no less than 20% of the day's total nutritional requirement. "Nourishing snack" is defined as verbal offering of items, single or in combination, from the basic food groups. Adequacy of the snack will be determined both by individuals in the group and evaluating the overall nutritional status of those in the facility.

In addition, although some chemical-based disinfectant cleaners used properly with proper dwell times, and the chemical residues removed, can disinfect the surfaces they come in contact with, they are not able to get deep down into porous surfaces to disinfect where much of the bacteria, germs and viruses live and breed. Even stainless steel examining tables and operating tables are porous and chemical-based cleaners may not thoroughly disinfect them leaving germs, viruses and bacteria waiting for the next patient.

So what is the solution to properly cleaning, disinfecting and sanitizing a veterinarian's office? Bake Sale

These low-cost silicone bracelets can be ordered in bulk with your slogan of choice for well under a $1. The right color combination and message can create a huge demand. Poinsettias

Recycling
Long-term fundraisers that help the environment are also popular. You can recycle printer toner cartridges or even used cell phones and raise a steady flow of cash. It's all about getting the word out and having lots of convenient donation points.

1/4 cup carrots, chopped

1 tbsp chopped parsley

Salt to taste

Unhealthy dietary influences are a great factor in the growth of childhood obesity. Portion sizes of food and soft drinks served at fast food restaurants are somewhat at fault for this epidemic. Portion sizes have greatly expanded; McDonald's French fries were originally sold in two-ounce portions. Today's "super size" fries are nearly seven ounces. Eight ounces was the original size of a vending machine Coke; this has expanded to twenty ounces (Mrdjenovic, Gordana, "Nutritional and energetic consequences of sweetened drink consuming in 6 to 13 year-old children," The Journal of Pediatrics, 2003, p. 605).

Soft drinks are the leading source of added sugar in children's diets. A 20 ounce serving of soda contains 17 teaspoons of sugar. As soft drink intake increases, milk intake subsequently decreases resulting in inadequate calcium and vitamin intake that may contribute to osteoporosis later in life. The caffeine in soft drinks can also interfere with sleep patterns, impacting school performance (Schwartz, Robert P., "Soft drinks taste good, but the calories count," The Journal of Pediatrics, 2003, p. 599).

Beverage companies blame the obesity epidemic in school children on the decline in physical activity. They are partly correct; however, it would take almost 40 minutes of moderate exercise to burn the calories from one 20 ounce soda (Schwartz, p. 599).

According to interviews I conducted with teachers, the majority of the milk sold in schools is either two percent or whole milk. The dietary guidelines for Americans recommend that school-age children have a diet low in total fat, saturated fat and cholesterol (cspinet.org). In a child's diet, milk is often the largest source of saturated fat.

For the prevention of future osteoporosis, it is important that children consume plenty of calcium since 95 percent of maximum bone density is attained by age 18. Children need the fat in whole milk for neural development, but only until age two. One percent and fat free milk provide the calcium children need for strong bones, but without the saturated fat that can contribute to obesity and heart disease later in life (cspinet.org).

One glass of whole milk has as much saturated fat as five strips of bacon. Two percent milk is not much better, being equal to about three strips of bacon. This is very important to note, because children drink up to three servings of milk per day combined between school and home. Switching to one percent milk or fat free milk is one of the easiest ways for children to get the calcium and vitamins they need while reducing their saturated fat intake and heart disease risk. Children who drink one cup of one percent milk instead of the same amount of two percent milk during the school day would cut almost 19 pounds of fat from their diet during their 13 years of school (cspinet.org).

Public schools are required by the National School Lunch Program to prepare meals that contain one third of the Recommended Dietary Allowance for protein and iron and no more than 30% of calories from fat. However, a USDA survey showed that a typical school meal still contains at least 35% of calories from fat (www.msnbc.com). Even worse, competitive foods and beverages are not part of the reimbursable Federal School Meals programs are not required to meet nutritional standards and are either sold as part of cafeteria food service (such as ice cream and pizza) or through other venues within schools such as vending machines and school stores.

Education about nutrition is a key component to the success of dietary changes and involving parents can only be beneficial to guarantee the success of the programs. Nutritional programs offer great potential for use within the public school system. There are several innovative programs that all have the possibility for successful implementation within schools.

The one percent or less school program was created by the Center for Science in the Public Interest (CSPI). A school-based nutrition-education campaign kit is available for purchase to promote the drinking of one percent or fat free milk in school and at home. When a school signs up for the program, they receive a kit tailored to their school's needs including signs to place in the cafeteria, directions for conducting taste tests, class activity lessons and flyers for parents. This program is appealing on several levels. It is designed to involve children in promoting healthy choices for themselves, their families and friends. It is also a very low cost to participating schools. The kit itself is only $65.00.

With the goal of finding out if children would choose healthy snacks over junk food, the United States Department of Agriculture (USDA) awarded grants totaling $6 million to schools through a Fruit and Vegetable Pilot Program (FVPP) for the 2002-2003 school year. The grants were used to provide each child in 107 elementary and middle schools with free fresh fruits and vegetables. The intent of the FVPP is to determine the feasibility and the success of such a program. The program has proven so far to be overwhelmingly successful and it is looking hopeful that this project will continue beyond the pilot (Buzby, Jean C., Guthrie, Joanne F., Kantor, Linda S. "Evaluation of the USDA fruit and vegetable pilot program," 2003, p. 1). The average cost of this program was $94 per student for the year (Buzby, p 12). Fresh fruits and vegetables were distributed to children through kiosks and free vending machines and some were served in classrooms as snacks. Over 90% of the participating schools provided nutritional education in conjunction with the program either by incorporating it in a lesson or as a health class. Some remarkable statistics emerged from the project. One school noted 25% fewer doughnuts sold at breakfast, one had a 50% decline in lunchtime dessert sales and a middle school noted candy sales dropped from an average of 850 pieces per week to 300 during the program (Buzby, p. 1).

There are simple changes schools can make to improve the healthy eating habits of their students. Breakfast at school is associated with increased math grades, fewer absences and improved classroom behavior (www.archpedi.ama-assn.org). According to the Food and Drug Administration (FDA) regulations, a cereal must contain 51% whole grain by weight to claim that "diets rich in whole-grain foodsmay help reduce the risk of heart disease and certain cancers." Fiber is a major component of whole grain, so ensuring there are at least two grams of fiber per serving also serves as a good indication of adequate whole grains in the cereal. As easy way for schools to change the breakfast selections into a healthy option for children is to add fresh fruit and whole grain breads and cereals that meet the above criteria (Bistran, Bruce, M.D., Ph.D., Willett, Walter C., M.D., "Are you eating the right kind of breakfast cereal?" Harvard Health Letter, May 2003, p.2)

The fat content of school lunch programs needs to be lowered to a level in compliance with the Federal school meals program. Replacing unhealthy competitive foods, such as the ice cream sold at lunch, with healthy choices and eliminating vending machines that are accessible to the elementary school children would be a tremendous step in improving children's eating habits at school.

Ingredients:

4 boneless, skinless chicken breasts
8 slices of Italian bread
8 slices Mozzarella cheese
3 tablespoons olive oil
2 teaspoons fresh rosemary, chopped
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tomato, sliced
Italian dressing

Procedure:
Set the griller to a medium-high heat temperature.
Mix the chopped rosemary, garlic powder, salt and black pepper together.
Brush the chicken with olive oil and add the mixed seasonings on it.
Place a small amount of oil on the grill grate and cook the chicken for about 7 minutes. Wait for the juices to get clear and for the chicken to be well cooked before you remove it from the grill. Then allow it to cool for 5-10 minutes.
Slice the chicken pieces about half an inch and sprinkle the pieces and bread with Italian dressing.
Put the tomato, cheese and chicken on the bread. Brush the bread with olive oil and put it on the grill.
Cook the panini until the cheese melts. Then remove from the grill.

To turn this meal into a 5 minute meal, cook your chicken ahead of time and freeze it cooked. When it's time to make your panini, place the cooked chicken in the microwave to defrost it before you place it into your Panini.

Pair your panini with fresh fruit juice or milk and your kids will enjoy a full-packed breakfast. You can also serve these delicious concoctions for lunch or dinner. Change the chicken to pork of fish if you want to be more experimental. It will then be a new recipe that your family will definitely crave. Cherry Juice Can Alleviate Arthritis

Drinking just one ounce, or two tablespoons, of tart concentrated cherry juice every day can help alleviate arthritis pain. That's because tart cherries, specifically Montmorency tart cherries, contain anthocyanins and two important antioxidants: isoqueritrin and queritrin.

Anthocyanins create cherries' dark red pigment. Arthritis inflammation and pain is caused by the hormone prostaglandin; it is directly related to two enzymes that cause tissue inflammation and the resulting pain. Anthocyanins inhibit those two enzymes, decreasing inflammation and joint pain. Remarkably, the pain-inhibiting strength is comparable to ibuprofen and naproxen. And laboratory tests at Michigan State University find that tart cherry compounds are at least 10 times more effective than aspirin in reducing inflammation--without any of aspirin's side effects.

Queritrin and isoqueritrin are flavonoids. Flavonoids function as antioxidants, meaning that they destroy free radicals within the body to generally help prevent cancer. Queritrin and isoqueritrin help eliminate the byproducts of stress, and they help slow down the aging process in general. Queritrin also possesses anti-inflammatory effects similar to non-steroidal anti-inflammatory drugs, or NSAIDs, such as aspirin or ibuprofen. Queritrin can also inhibit the body's production of inflammation-causing leukotrienes and histamine.

Anthocyanins possess additional beneficial properties. They are powerful antioxidants, meaning they destroy free radicals within the body to generally help prevent cancer. Anthocyanins are even more powerful than vitamin E. Tart cherries boast a whopping 26.5 grams of anthocyanins--the highest of all fruits. Anthocyanins also help prevent plaque buildup in artery walls, which in turn helps prevent heart disease; they're more potent in this regard than vitamins C and E. Also, tart cherries are a low-glycemic food, so they're diabetic-friendly.

The antioxidant queritrin also possesses additional beneficial properties. It is one of the most powerful anti-cancer agents known. Its antioxidant properties are superior to vitamins C and E.

And if these powerful antioxidants in tart cherry juice weren't enough, it also contains ellagic acid, which may be the most potent substance to prevent cancer. It has been found to inhibit cancer cell growth.

Drinking two tablespoons of Montmorency tart cherries daily is the equivalent of eating 60 cherries. The tart cherry juice can be added to any other beverage, such as water or tea. Or you can even add it to a fruit smoothie for breakfast or as an afternoon pick-me-up.

How does your day start? Are you someone who hits the snooze button, staying in bed as long as possible? Or maybe your mornings are rushed and hectic, trying to get the kids out the door. In this crazy morning routine, are you taking time for breakfast? Many people dont. They say they dont have time, theyre not hungry in the morning, or some mistakenly reason that in an attempt to lose weight, skipping breakfast will help. But did you know the opposite is true? If youre tying to lose weight you need to eat breakfast.

Milton Stokes, R.D., M.P.H., and chief dietician for St. Barnabas Hospital in New York City, says, People skip breakfast thinking theyre cutting calories but by mid-morning and lunch, that person is starved. The results? Breakfast skippers replace calories during the day with mindless nibbling, bingeing at lunch and dinner. They set themselves up for failure, says Stokes.

Other researchers concur. Gretchen Hill, Ph.D., Associate Professor in the Department of Animal Sciences at Michigan State University says, People often think they can save calories by skipping breakfast, but if they kept food journals, theyd find that they more than make up for those saved calories later in the day. There is a biological reason this happens. A nerve chemical called neuropeptide Y (NPY) is released by the brain when you skip breakfast, which unconsciously signals you to keep eating. This is called night-eating syndrome. The result is that once you start eating at mid-day you dont stop and you end up eating more between noon and bedtime than someone who ate breakfast.

In looking at the habits of successful weight-loss losers, James O. Hill, Ph.D., co-founder of the National Weight Control Registry, and director of the Center for Human Nutrition at the University of Colorado Health Sciences Center said, Most- 78% - reported eating breakfast everyday, and almost 90% reported eating breakfast at least five days a week which suggests that starting the day with breakfast is an important strategy to lose weight and keep it off.

The benefits of breakfast can make for a smoother day, too. Breakfast can increase concentration, memory, energy, and muscle coordination.

Think about the consequences of not eating in the morning. If the last time you ate was at 8pm last night and you dont eat until lunch time, thats sixteen hours your body has been forced to run without fuel. Your brain and central nervous system both need glucose, or blood sugar, as fuel to keep your systems working. But going that long without eating has another effect on your body. Elizabetta Politi, R.D., M.P.H., and Nutrition Manager for the Duke Diet and Fitness Center at Duke University Medical School says, When you dont eat breakfast, youre actually fasting for 15 to 20 hours, so youre not producing the enzymes needed to metabolize fat to lose weight.

If you skipped breakfast with the intent of saving the calories in order to lose weight, you could be creating circumstances that cause your body to hold on to fat. But it gets worse.

When you wake up in the morning, your body is naturally ready to look for food. It is at this point your metabolism is revved up and your levels of cortisol and adrenaline are at their highest. If you skip breakfast, or eat too little, your brain, which is looking for energy, will find another fuel source. In response to the search for fuel, energy starts getting pulled from muscle, resulting in muscle tissue getting destroyed. Because of this fuel shortage, when you do eat, your body and brain still think theyre in crisis mode, and your body saves that energy in the form of fat.

Now that weve discussed the importance of breakfast, lets take a look at some healthy choices, because hitting the drive-thru on your way to work isnt a going to be a good choice.

There have been some recent studies on the benefits of eggs at breakfast. One study in the International Journal of Obesity reported that eating two eggs at breakfast, as part of a reduced-calorie diet, helped overweight adults lose more weight and feel more energetic than the participants who ate a breakfast bagel of equal calories. Nikhil V. Dhurandhar, Ph.D., lead researcher and Associate Professor in the Laboratory of Infection and Obesity at Pennington Biomedical Research Center, a campus of the Louisiana State University system says, People have a hard time adhering to diets and our research shows that choosing eggs for breakfast can dramatically improve the success of a weight loss plan.

In his study, participants who consumed the egg breakfast as part of their reduced-calorie diet lost 65% more weight, exhibited a 61% greater reduction in BMI, and reported higher energy levels than the participants who consumed the bagel breakfast.

Eggs arent the only healthy breakfast alternative. Make yourself a smoothie. Take two cups of strawberries, one banana, and half a cup of pure water and blend them in a blender. If you like your smoothies a little thicker, slice and freeze the banana first.

Bodybuilding Pre-Contest Diet Plan

It's no secret that competitive bodybuilders are among the most successful dieters in the world at losing pure bodyfat and getting "ripped". Bodybuilders do things differently than the 95% of dieters who fail. And in this article I will outline the basics of a good bodybuilding pre-contest diet plan. This information will really help you if you are planning on competing in the future. And even if you are not really interested in getting on stage as competitive bodybuilder, but you would like to look like one, then the info covered here will help you get that lean "beach body" look.

I've been competing in bodybuilding competitions since 1995 so I've picked up a few tricks over the years and I'm going to share them with you here...

I personally start dieting for a contest at least 6 months in advance. I want to have plenty of time to prepare myself. For the first month I simply cut out all junk foods and eat nothing but clean foods. Such as beef, chicken, turkey, fish, eggs, milk, protein shakes, rice, potatoes, pasta, fruit, vegetables, etc. I eat about 5-6 small meals each day. I drink plenty of water at least 1 gallon a day. I will also do about 30 minutes of cardio exercise 4-6 times each week, before breakfast. I will continue my regular weight training workout.

The second month of preparation is very similar to the first. I will still eat the same as mentioned above. But I will increase my cardio exercise to at least 45 minutes, 5-7 times per week, before breakfast. The whole idea of doing cardio before breakfast is to help burn up more stored bodyfat. At this time there is no food in your system to be used as fuel so you'll burn more bodyfat from your cardio. It also helps to jump start your metabolism for the day. After exercise your metabolism is elevated and remains so for several hours.

The third month I get stricter with my diet. I will begin to cut back on my portions of starchy carbohydrates while keeping my protein intake high (between 250-300 grams of protein per day). I also eat more vegetables. My diet is now mainly foods such as very lean meat, poultry, fish, protein supplements, vegetables, rice, potatoes, oatmeal, etc. I will increase my cardio to about 60 minutes each morning before breakfast.

I'll also start taking a fat burner. For my last show I used "Palo Alto Labs Leviathan". I found that it worked great, I would take 2 caps twice per day on an empty stomach. Once before cardio and again before my weight training workouts because it helps give me an energy boost, curb my appetite, and raise my metabolism enabling me to burn more bodyfat.

The fourth month is pretty much like the third month with dieting and doing cardio each morning before breakfast. I will also start practicing my mandatory poses 3-4 days per week. At this stage I am getting lean and can start to see the definition showing in my abs, legs, back, chest, etc...

The fifth month before the contest I get stricter with my diet. I will eat approx. 1 gram of carbohydrate and 1.5 grams of protein per pound of bodyweight each day. I don't normally count fat grams, but they are kept as low as possible. But I will include essential fats through flaxseeds, fish oil, etc.

A typical day will go like this:

Cardio - take fat burner and black coffee - 1 hour of cardio

Meal 1 - bowl of oatmeal mixed with protein powder - egg whites

Meal 2 - chicken breast - garden salad

Meal 3 - can of tuna - garden salad

Workout - take fat burner and black coffee - weight training workout - practice posing - protein drink

Meal 4 - steak - steamed veggies - sweet potatoes

Meal 5 - protein drink

I also salt my food and even add a couple shakes of salt to my protein drinks. This may seem off the wall to most people. But I find that if I don't add salt to my diet I get bad muscle cramps when training. Don't worry you will not retain water, your body will adjust to a higher salt intake within a few days and as long as you are drinking lots of fluids your body will flush out any excess water. I'll keep doing this until 2 days out from the show.

I strive to be in shape one month out before the contest and then just keep with the diet, cardio, training, etc. to let my conditioning just harden up. I won't lose a whole lot more bodyweight, but my skin will get tighter and thinner.

I don't try and lift too heavy in the gym at this stage because I know that I will not gain any new muscle during the last month before a contest, I am just trying to maintain my muscle mass and get leaner. I basically have my posing routine down pat. I just want keep plugging away consistently. The temptation to cheat on my diet is very strong now. It is very important not too cheat. I keep my eye on the finish line and know that the dieting will be all over soon.

Carb Loading & Water Intake...

I do not carb deplete or carb load during the last week. I have tried all kinds of crazy stuff like this in the past and I found that it is best to just diet right up to the day of the show. Carb depleting and carb loading is too "hit and miss" you risk screwing up your conditioning, it may make you look a little better, or it could make you look a lot worse. You are better off playing it safe by sticking to your diet and then just slightly increase your carb intake slightly for a couple days before the show (i.e. instead of eating 1 potatoe at a meal, eat 2 potatoes, etc.).

During the last week I will increase my water intake to about 2 gallons per day. I will stop all weight training and cardio a couple days before the contest to let my body rest and recover.

Friday night before the contest I will cut back on my water intake and just have a small glass of water with each meal. I also take herbal diuretic capsules on Thursday, Friday, and Saturday to help get rid of the excess water under my skin. I do not cut my water intake entirely, just cut back. Cutting out water entirely can leave you flat and smooth. You need some water in your system in order to pump up and pose properly.

Tanning...

I'll go to the tanning salon about 4 times per week during the last 6 weeks prior to the contest. This will give me a base tan. Then on Friday before the show I'll put on about 3-4 coats of ProTan. This is a spray tan that you paint on with a sponge brush. Saturday morning before the show I'll also put on a coat of Dream Tan. This is a dark tanning cream that you rub on your skin. I'll put a coat of this on Saturday morning, another coat before pre-judging, and again before the evening show. Dream Tan works great and it has oil in the tan so you do not need to use much if any additional posing oils.

Back Stage...

When I go to the contest I take a MP3 player with my posing music. I try to find a place by myself back stage so I can practice my posing routine. By doing this, my routine is fresh in my mind before going on stage in front of the audience and judges.

When pumping up before going on stage I will do some light, high rep, upper body exercises such as push ups, bent over rows, bicep curls, etc. with a rubber fitness band. Never pump up the legs or the abs, these muscles always look and flex better when they are not pumped. Do not pump up too much because it will make you shake when you pose. Just warm up and get the blood flowing to the muscles.

And the last thing that I recommend is to go out there and have a good time. Be confident and proud of your accomplishments and put on a good show for the crowd. At this point you have done all you can do, now it is up to the judges to decide the rest.

Glittering sunlight shafting diagonally through his open hatch, her captain gradually becomes conscious another day has dawned. The still air produces hardly a sound this early. The flat glassy sheet of lagoon water is undisturbed apart from an occasional plop of small fish leaving behind their ever widening circles as they flop back in.

Scalding coffee from the cafetiere injects some life into their veins and kick starts the day. Our little ship, drawing her nourishment from the water she is in and the wind, wonders why her crew have to sit down at regular intervals, ingesting vulgar quantities of all kinds of food? It must be important to them as they spend an inordinate amount of time engaging in this pastime. At least when they are thus occupied they are not poking and prodding at her! Over breakfast and sheltering under the awning, her captains gaze is once again drawn to the sandy strip he explored the afternoon before embedded in his brain since he first looked this morning it nags at him now - something has changed in the disorderly pattern of the driftwood strewn along the beach. He missed something yesterday? Has it arrived overnight? Is he imagining a distorted form in the shimmering curtains rising from the sand? Whatever, there is a rounded dark lump where there wasnt yesterday. He cannot leave this place without investigating so into the tender and a quiet pull to shore. He slipped away with hardly a sound Local Beachcomber but our little ship feels his anticipatory excitement. Off on a wild goose chase again! she supposes - but, what if it is what he thinks it could be? It just might be, after all these years of looking. Maybe his fortune is in today and he is about to strike lucky. Stooping to lift it from its bed in the sand he is almost overcome with the possibilities. Hefting it in his hands he estimates the weight at around twelve kilograms wow! At twelve US dollars per gram, that is a small fortune! No matter it cannot be traded in the US, there are plenty of places where it can be sold on the open market. Cradling it in his arms he shuffles back to the Avon, placing it reverently in the bottom, and rows back with considerably greater energy than going in. Careful not to lose his balance on his wobbly platform, he gently rolls it into the cockpit. Announcing to the rest of her crew the arrival of this great treasure, he dives into the locker containing the sewing kit60 and pulls out a monstrous sail needle. These needles have a large spaded tip, sharp as, to penetrate leather, and with an overall appearance of malicious intent. Heated to a red glow over the stove, her captain inserts the searing tip into his new found object of worship. Apart from radiating a few lazy wisps of white smoke, nothing happens. No pool of dark viscous fluid with musky fragrance? Reheat the needle and insert again in a different position same result, nothing. Several more attempts produce no further change, and the remainder of her crew by this time are super sceptical and articulating many banal offerings! Her captain finally gives in and accepts that his lump is not a piece of ambergris fools gold! No matter, it created some interest for a time. Its momentary attraction over and having no further use, the blob is consigned back to whence it came. Lobbing it overboard, it is last seen disappearing at the end of its parabolic curve with a dull lagoon gulp. Sinking slowly, a few small fish follow it to rest on the floor of the lagoon, raising a dusty cloud of sand, then ignore it. Never did find out what it was!

The lightly gusting breeze breathes into her sails, whitely ballooning and majestic, driving her back across the lagoon at a respectable five knots. Sibling crew now making the top pulpit rail her home in these situations is constantly indicating to the helmsman with her arms to steer to port or starboard to avoid a coral head. Most of them pass by harmlessly and well under our little ships keel. Sailing into the afternoon sun our little ship chides them to be extra vigilant so they can see under the stabbing reflections off the lagoon surface. There are no boatyards around these parts to haul her out if she gets a damaged foot. One such of these is marked on the chart with an accurate GPS position and she is steering a wide berth around it. Suddenly, she is aware of a large mountain dead ahead. Alarmed she rattles her forestay to attract sibling crews attention. Sweeping left to right and back, sibling crews eagle vision pierces the curtain of white light, picks up the looming dark outline dead ahead, and gesticulates wildly with left arm to turn sharply to port. Immediately understanding the danger, Anglo crew throws the helm over and all eyes are riveted over her starboard side, staring wide eyed and with baited breath as the snapping brown fangs slide past within millimetres of her hull. The tallest point is no more than half a metre under the surface and could wreak some serious damage if its teeth were able to grind into her side. Clear and present danger passed, her crew look at each other with relief clearly etched on their faces. With nervy grins they congratulate one another on yet again avoiding disaster. Good seamanship all round, purrs her captain, with the thought that the slightest error by the helmsman in reading the bow spotters signals would have resulted in them putting our little ship hard to on the coral head not a position any of them would wish for! The GPS co-ordinates are rechecked and found to be a little out - this is corrected and a log entry made to advise the chart publishers of the error.

Later that evening, sibling crew confesses to having been distracted and looking at the wharf and village of Tiputa Passe on approaching the coral head something snapped in the back of her mind and brought her attention back to her job in the same instant she saw the approaching hazard. Of course, you bumpkin! It was me rattling my forestay at you. Our little ship chips in. Sibling crew is not sure, but she feels a nibble in that same part of her brain again. Hmmmm, I wonder? she muses. Cant possibly be - boats dont have their own personalities or do they?

I love my family and I love it when they can visit for an extended time period. A few years ago, my family and my brother's family started getting together at the beach in North Carolina for a week. We rent a condo, and just enjoy the company. It has been such a great time! I am the one who loves cooking (and eating), so that is where I tend to concentrate my efforts. Over the years, I have found the important thing is to plan ahead so that I can spend time with them, and not just focus on food - although that is one of my favorite things in life!

So, I have a few tips that have worked well for us, and made the trip a little more organized and hassle-free. You have all the normal things you have to take to the beach, like wine, soda, water, toiletries, tissues, paper towels, foil, napkins, etc., so just make a master list of those things, and determine which you are willing to purchase at home and take, and those that you want to purchase at the beach grocery stores.

But, let us focus on the food. First, I make a list of the menus that would be enjoyed by the group for the nights we will be cooking, and not eating at a restaurant. And, since the sun takes so much out of you, do not forget the appetizers and the dessert! Breakfasts, lunches and dinners. Let us start with breakfasts.

I usually take a couple of breakfast casserole and coffee cake or muffin recipes along that can be made there. Also, think about cereals, juices and bagels. It all depends on the preferences of the group. Oh, and do not forget the coffee!

Lunches are usually sub sandwiches, tacos, pasta salad, nachos, and peanut butter and jelly or grilled cheese sandwiches for the little ones. Most lunch ingredients are purchased at the beach, but we can make the beef for tacos and pasta salad ahead. The beef can be frozen.

Now on to dinners. We are talking about appetizers, main courses, sides, and desserts. We go out about half of the nights to a restaurant, so 3 to 4 will be spent having dinner at the condo, which we will have to prepare - although we have ordered pizza delivery regularly for a meal.

Because this is always a beach vacation for us, we count on buying and preparing at least one seafood meal. I usually purchase shrimp and scallops and deep fry them with the local breading. Next, pasta and meatballs is always a hit for those huge appetites we build from a long day on the beach. We can prepare meatballs and pasta sauce ahead and freeze them. I also bake a few baguettes and freeze as well. Another idea is to make grilled teriyaki chicken breasts. If there is a fourth dinner, we usually opt to have seafood while we can get it fresh. Our group favorite is shrimp. For this meal, I would normally make some steamed shrimp as well as fried. The local fish markets usually have some great cocktail sauce as well, unless you make some of your own that you would prefer.

So, out of 7 days at the beach, here is what sample dinner menus may look like:

Sauteed Mixed Vegetables
French Bread
Leftover desserts from the previous meals

Dinner #4
Leftover appetizers from previous dinners
Steamed and Fried Shrimp with cocktail sauce
Salad
Steamed Green Beans
Ice Cream with hot fudge sauce

The main thing is to be organized and think ahead about what you will make. Then, it is easy to determine what you can do ahead and what you will need to prepare while there. The more you can have completed before the trip means more time to just relax, and less headaches while you are on vacation.

It is also important to make sure that you take those items that you know you or your family will want to have during the trip, and may not be available at the beach. For instance, your favorite coffee or cheeses. Also, depending on what you decide to make, you might include some of your own cookware or cutlery. You never know what the condo or rental property will stock.

I hope these tips will help you in planning your vacation. I will include a few recipes in future articles that I have mentioned here, although there are many versions available. Keep in mind that you are looking for quick, easy and yummy recipes to cut down the time in the kitchen.

We have planned ahead like this for the past two years, and it only leaves determining where and which nights you are going to dinner to think about. But you can agonize over those decisions while you are hanging out on the beach or in the pool!

Which one do you believe to be healthier, a doughnut or a bagel?

Over the years doughnuts have been given a bad name of being fattening and unhealthy but are bagels just as bad?

Know it is proven that doughnuts are better than bagels as you will see that over the past couple years bagels have super-sized to the extreme. Some bagels are three times larger than doughnuts not matter what the sugar content is.

Knowing that a single small bagel yields approximately 40 grams of carbs and a large one can yield up to 75 grams this is too many carbs for some fitness competitors in one sitting. Even though bagels are low in fat, the high carb content is something we need to consider when trying to limit carbs to 1.5-2 grams per pound of body weight daily.
Bagels are bigger than ever, with what was once a standard bagel, about 2 ounces, now labeled as a "mini." Supermarket bagels are nearly 4 to 6 ounces, and many bakery bagels are even larger to 12 ounces. Plus the cream cheese of course.

Is their any hope in eating bagels for a fast and healthy breakfast when time is short and making a delicious nutritionist breakfast out of the question?

Bagel Healthy Tips:

1) Choose whole wheat, oatmeal or rye These bagels have the lowest glycemic rate for breads that will have them with you longer to avoid going to fat.

2) Low-fat cream cheese By selecting a healthier cream cheese it will help keep the fat amount to a minimum.

3) Small or Medium Bagels have been super sized so look for the bagels that are small or medium size. (Bagel = 4oz)

4) No added sugar Bagels seem like the healthier choice but now they are coming out with bagels with added sugar. Thats mean even more calories.

5) Yes to protein Mix some protein in with a bagel to slow the digestion process longer for more energy and longer satisfaction.

One of the initial stages of the selection process will see a requirement for you to sit the British Army Recruit Battery Test. The test is more commonly known as the 'BARB test' and it has been in use for many years. It is a tried and tested method that the Army will use to determine what career(s) you are most likely to be suited for. It is important that you aim for the highest score possible on the test and this can only be achieved through 'deliberate' and 'repetitive' practice.

The pass mark for the BARB test is currently 26 although you will need to confirm this with your local Armed Forces Careers Office. This effectively means that you must get 26 questions correct, but as I mentioned earlier don't just settle for a pass. You need to achieve as high a score as possible as this will give you more career options depending on your academic results.

Your choice of trade will be dependant upon the score you achieve during the BARB test. Basically, the higher your score, the more career options you will have. This is a good incentive therefore for you to work hard and prepare fully.

It is also important that you follow my previous advice on creating the right impression. It may not seem appropriate to dress smartly when you are attending the BARB test but that little bit of extra effort in terms of your appearance and bearing will go a long way!

Psychometric tests within the British Army are used as a tool to measure the mind and your ability. If we break down the word 'psychometric' we can see that 'psycho' means mind and 'metric' means to measure. BARB is a computer-based, psychometric assessment that was developed by the Defence Evaluation and Research Agency (DERA) and Plymouth University. It is a series of timed questions that assess a candidate's ability to absorb information quickly and logically. The computer automatically calculates the candidate's score, based on the number of correct answers and the time taken. The final score is referred to as the GTI (General Trainability Index). The BARB test has been in use since July 1992.

Tips for improving your BARB test scores

Once you have completed your BARB test preparation there are still a number of things you can do in order to improve your scores. It is vital that you get a good night's sleep the night before you are due to take the test. There are many reasons for this but the main one is that you will give yourself a better chance of achieving a higher score. This in turn will give you more career options to choose from. It will also ensure that you feel confident before taking the test as fatigue can cause stress, which will inhibit your performance on the day. Make sure that you know exactly where you need to go to take the test. This may sound like an obvious tip but you'll be amazed at how many people get to the test centre late and are then not allowed to sit the BARB.

My advice is to go to the test centre a few days before your scheduled date to familiarise yourself fully with the directions and parking facilities etc.

Do not take the test on an empty stomach. You should try to eat a good breakfast on the morning of your test. This doesn't mean eating a great big fry up but instead eating something that is light and that will give you sustained energy throughout the day. A bowl of porridge is great for providing sustained energy or a healthy cereal such as bran flakes with a chopped banana spread over the top.

If your test is scheduled to start at 10am make sure you get there early enough to avoid a last minute panic. It is far better to get there early and have to hang around rather than get there late and not be able to sit the test at all. Take a small bottle of water with you to keep yourself hydrated and focused. If you wear glasses make sure you take them along with you. You will be using a computer and you need to ensure you can see correctly. The night before the test read any correspondence thoroughly at least twice and make sure you haven't missed anything glaringly obvious. You may be required to take something with you and if you don't do what is required it shows that you are not very good at following instructions - something that is key to a soldier's role.

What dress code would you expect and what dress code would you be most impressed with? Remember that you are joining a disciplined service that always looks smart and prepared. Just because you are not a soldier yet, doesn't mean to say you can't start thinking like one. My advice is to go smartly dressed, which will present a good image.

Unlike some may believe, bodybuilding need not become a chore, as there are a wide variety of foods that allow weight lifters to achieve maximum results while living a fulfilling lifestyle, even when working a demanding job, but doing so requires prudently timing simple carbohydrate meals to ensure body fat control, while using healthy fats and portable complex carbohydrates as alternatives to simple sources during meals where convenience is necessary so that results remain consistent and impressive, while health is preserved.
